Cookbook

Inuili Culinary School in South Greenland partnered with a University of Southern Maine (USM) Tourism and Hospitality (TAH) program course TAH 361-Agritourism. Students from both countries used local foods to create a cookbook together. Throughout the knowledge exchange, students first worked remotely to learn from each other, then used traditional foods to create new recipes using the same or similar main ingredients. Students at Inuili in Greenland and USM students also researched the origin of recipes and stories.

 

The first week of May, the USM delegation spent the week working with the students there to cook their recipes and share with the public during a food event. This process was captured with photographers and videographers through the spring term and then during the food event and social media documented the process.

Knowledge Exchange Project Outcomes:

  • Inuili students practiced speaking in English and the co-production of the cookbook enhanced the Inuili curriculum.

  • Finalizing of recipes and knowledge exchange between Wabanaki, USM and Inuili students and faculty.

  • Reception at Inuili where cookbook recipes were showcased to the community.
